Homemade Granola Favorites

Soooo easy to make, granola adds a delicious crunch to so many things! (And delicious with this Honey Crisp Applesauce!) They are also wonderfully adaptable to suit personal tastes. Here are several of our family’s favorites!

Favorite Granolas

Grandma Melanie’s Favorite Granola
Adapted from Moosewood Restaurant Cookbook

In a small saucepan, warm:
1/4 cup (50 g) vegetable oil
1/2 cup (170 g) honey or pure maple syrup
1 tsp table salt
1 T pure vanilla extract

Combine in a large bowl:
6 cups (594 g) rolled oats (not quick or instant)
2 cups of a mixture of your favorite coarsely chopped nuts (almonds, pecans, cashews, peanuts, hazelnuts, etc.)
1/2 cup (57 g) unsweetened coconut
1/4 cup (30 g) raw pumpkin seeds
1/4 cup (35 g) raw sunflower seeds
2 T brown sesame seeds
1 tsp cinnamon

Drizzle the warm honey/oil mixture into oat mixture and using your hands, make sure it is thoroughly combined.

Spread the granola on two un-oiled baking sheets. In a preheated 325°F oven, bake for 20 minutes, then add the Dried Fruit Mixture and stir. Return to the oven and bake another ten minutes.

Dried Fruit Mixture
1/4 cup (57 g) dried cranberries
or
1/4 cup (32 g) dried apricots

Remove from the oven and stir every ten minutes until cool to avoid clumping. Store in a closed container at room temperature.

Jessie’s Favorite Granola
Adapted from Seattle Granola Company’s Original Granola

In a small saucepan, warm:
1/2 cup (170 g) pure maple syrup
1/4 cup (54 g) extra virgin olive oil
1 tsp kosher salt
1 T pure vanilla extract

Combine in a large bowl:
6 cups (594 g) gluten free whole grain rolled oats (not quick or instant)
1-1/2 cups (213 g) coarsely chopped almonds
1/4 cup (30 g) raw pumpkin seeds
1/4 cup (35 g) raw sunflower seeds
1/2 cup (57 g) organic unsweetened coconut flakes
2 T flax seeds
1 tsp cinnamon

Drizzle the warm syrup/oil mixture into oat mixture and using your hands, make sure it is thoroughly combined.

2 T (27 g) brown sugar
2 T (27 g) unrefined cold pressed coconut oil

Remove from the oven and stir every ten minutes until cool to avoid clumping. Store in a closed container at room temperature.

Deeper pans also work for baking
So delicious with fruit and yogurt over warm oatmeal!

  2. […] Make sure your instruments are clean and sanitized. Carefully lift three jars and place them on a clean sheet pan (cookie sheet). Use the funnel to spoon the applesauce into the jar, leaving 1/4″ head space at the top. Remove the funnel and tap the jar lightly to release any air bubbles (use a clean knife along the sides if necessary). Run a clean cloth over the top edges to make sure each jar rim is clean. Use tongs and pull out a circular top and ring out of the simmering water on the stove. Carefully place the top on each jar and screw on its ring, making sure it is on tight (necessary for ensuring a oroper seal). Repeat until all the jars are filled and ready. You are now ready to give the jars an essential water processing that will allow the applesauce to be stored. Bring the large pot of water back to a full boil and keep it at a full boil for the whole processing time, cover on. Once boiling, use the jar lifter to set the jars into the pot. Put the lid on and boil for 10 minutes for half pints and 12 minutes for full pints. Remove the jars from the water with jar lifter when the boiling time is complete and place them on the sheet pan to cool. As they cool, you’ll hear the lids “pop” one by one as the lids seal onto the jars. That’s a good thing! If you don’t hear that pop (or you can see that it has failed to seal), you can reprocess it by changing the jar, adding a new lid and waiting 24 hours before reprocessing. Allow jars to cool completely before adding a label. Homemade canned applesauce will last a 12-18 months if stored in a cool, dark place. Take a moment to include a “Use By” date on your label.
