The Perfect Side Salad

Full of crunch, sweet fruit and creamy feta; this salad seems like a casual date but pulls out all the stops and becomes the date you keep smiling about later. The fruits are interchangeable depending on what is freshest at your fruit stand. This lovely full bodied Balsamic Vinaigrette is a fantastic addition too!

The Perfect Side Salad

  • Servings: Four

5 cups green and red lettuce, washed and chopped
1/2 of a small sweet onion (we love Walla Walla Sweets; or a 1/3 of a red onion is lovely too)
1 seedless orange, peeled and chopped (If in season, a few tangerines are great too)
1 cup fresh strawberries, sliced
1 large carrot, chopped
1/4 cup purple cabbage, chopped
1/4 cup dried cherries or cranberries
1/4 cup chopped walnuts or pecans
1/2 cup feta cheese, crumbled

Balsamic Vinaigrette

Arrange the lettuce in the bottom of a salad bowl. Layer on the fruit and veggies and top with the nuts and cheese. Drizzle oil and vinegar over the top, toss and serve.
